Ingredients
For Marination

  • 500 grams of chicken 
  • Salt as required
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp biryani masala
  • 11/2 tbsp ginger garlic paste
  • 1/2 cup mint leaves
  • 1/3 cup coriander leaves
  • 1 cup yogurt
  • ½ lemon

For Biryani

  • 350 grams basmati rice
  • medium onions very thinly sliced
  • 2 1/2 cups water
  • 3 medium tomatoes sliced 
  • Salt as required
  • 3 tbsp ghee
  • All whole garam masala spices(2 bay leaf, 1 big cinnamon, 4 cardamoms, 1 star anise, 1 tsp Cumin seed, 1 javitri, 6 black pepper, 4 cloves
  • 4 sliced green chillies 
  • ¼ cup mint leaves
  • ¼ cup coriander leaves
  • 1/4 cup fried onions
  • 4 tsp oil

Instructions
Marinating the Chicken

  1. Take a mixing bowl. Add salt, turmeric powder, red chili powder, ginger garlic paste, biryani masala, chopped mint leaves, chopped coriander leaves, lemon juice, yogurt and mix well.
  2. Add chicken pieces and mix again.
  3. Leave the marinade for 1 hour.

Soaking Rice

  1. Soak rice for 30 minutes. Rinse well before cooking.

Making Biryani

  1. Heat a pressure cooker.
  2. Add 3 tbsp of ghee and 4 tbsp of oil.
  3. Put all the whole garam masala spices and green chillies sauté for a minute.
  4. Add very thinly sliced onions and sauté until they turn brown.
  5. Add tomatoes and fry for a while until it gets tender. 
  6. Put the chicken marinade, mix well, cover and cook for 5 to 7 minutes on medium flame.
  7. Approximately 11/2 cups of water come out from the marinade after cooking.
  8. Open the lid, mix for once and add the soaked rice.
  9. We need to add 41/2cups of water to 21/2 cups of rice. So 21/2cups of water is enough as there are already 2 cups of water in the chicken.
  10. Add lemon juice. 
  11. Taste the water for salt and add it as required.
  12. Add mint leaves, coriander leaves, fried onions, and some more ghee 
  13. Cover the pressure cooker with lid and cook up to 1 whistle and turn off the flame.
  14. Let the pressure release on its own and serve hot with boiled egg and raita, salad
